Many posts back, during my low carb days, I cooked a Bacon & Cheddar Quiche . It came out very good and I ended up making it again, only using deli ham in place of the bacon (still good). However, looking at it in a Weight Watchers way it comes to 9 pts. a piece...and well, that just doesn't work. So I re-worked the recipe into a low fat version and made it yesterday:
It didn't come out as pretty as the other, but the taste was still wonderful. So what was the recipe? Here it goes:
4 slices of cooked bacon ( I used the pre-cooked kind)
1-1/2 cups of egg beaters
1 cup of low fat shredded cheddar cheese
1 cup skim milk
1/2 tsp table salt
Mix together the egg beaters, skim milk and salt. Arrange the cheese & bacon evenly in a greased 9" glass pie plate. Pour egg mixture evenly over the cheese/bacon. Bake at 350 degrees for 35-40 minutes (watch the last 10 minutes so top doesn't burn). Again it makes 6 servings that come out to 3 points each!!
As with the others, I froze them. I'll let you know how they taste reheated, but I don't forsee any problem. I thought I'd reheat it and then add a slice of tomato on top. Next time I'm going to sautee some mushrooms and onions and add to it! I think this dish can really have variety added to it; so whether you use this version or the low carb one - experiment!
